I container medjool dates ( usually about 24 dates).  If not pitted, soak in warm water for 1 hour and then remove pits

2 cups almond meal/flour

1 cup shredded coconut ( reserve ⅓ cup for rolling)

⅔ cup oil

⅔ cup cacao powder

2 tbsp chia seeds

2 tbsp flax meal

Peppermint or Wild orange essential oils optional.  Add 4-5 drops to the batch as desired for a refreshing twist!

Add dates to food processor and blend well.  add remaining ingredients slowly and keep mixing till smooth texture.  Roll into 1 inch balls, roll in coconut. Store in fridge for 3-4 days ( also freeze well). DIY
